The Importance of Temperature for Sourdough Starter
If you maintain a sourdough starter, you are familiar with the issues that can come with a starter's maintenance. Daily feedings can become a chore and sometimes forgotten altogether. Discard is wasted or builds up in the refrigerator. Fermentation activity can be unpredictable, especially in fluctuating temperatures. The Sourdough Home allows you to keep your starter at a constant temperature year-round, regardless of season or ambient temperature.
In addition to keeping it at one specific temperature, with the Sourdough Home, you can keep your starter at different temperatures to adjust your feeding schedule. Lower temperatures will slow fermentation, allowing you to go days between feedings.
Adjust Your Feeding Schedule
Precise control over a wide range of temperatures allows you to manage the fermentation rate of your starter and helps you control when your starter peaks. Weekend bakers may only want to feed their starter occasionally. Daily feeding is unnecessary and wastes a lot of flour. Often, bakers store their starter in the refrigerator as an alternative to feeding daily. However, refrigerator temperatures hover around 38°F (3°C), too cold for the microbes to stay active. When it comes time to bake, the starter may need multiple feedings to get it up to full strength and ready for baking. Using the Sourdough Home to store your starter is the perfect solution. By keeping your starter cool but not cold, you can slow down fermentation without bringing it to a complete halt. Your starter will stay healthy and ready to use when you're ready to bake.
Adjust Your Feeding Schedule
We ran a side-by-side comparison of starters kept at different cool temperatures. We kept one starter in a refrigerator at 38°F (3°C), and we kept the other in the Sourdough Home set to 50°F (10°C). We wanted three days to pass without feeding our starter- a common situation if you are away for the weekend. The seed ratio, hydration level, flour type, and beginning temperature were identical for each starter. The starter kept in the Sourdough Home experienced much more fermentation activity than the one held in the refrigerator. After 72 hours at 50°F (10°C), it was fully ripe, while the refrigerator starter was sluggish and showed little signs of activity.
Next, we used a portion of each starter to seed a levain. The levains were identical other than the starter used. Once mixed, the levains were kept at the same temperature (78°F / 25°C) to ripen.
After 6 hours, the results showed a clear difference. The levain seeded with the Sourdough Home starter had considerably more fermentation activity- tripling in size by the time the other levain had barely risen.

Feeding Schedule Guideline
With the Sourdough Home, you can create a starter feeding schedule that works for you. Feed your starter once a day, every three days, or even once a week. Time to peak at various temperatures will depend on seed ratio, hydration level, and type of flour used. Experiment with your own starter to get desired results.
Using a constant feed ratio (the amount of starter: flour: water) and continuous temperature gives you great control over when your starter peaks. We have some guidelines below based on our experiments, but your results may vary depending on your starter.

ᐩSeed Ratio: This is the ratio of active culture to fresh flour and water. The more active culture used, the faster your starter grows and peaks.
Experiment with Temperature to Influence Flavor
Not only can you maintain the perfect temperature and adjust the feeding schedule, but it is possible to use temperature to adjust the flavor profile. Lactic acid bacteria (LAB) far outnumber the yeast present in sourdough (roughly 100 to 1) and play a huge role in the flavor and aroma development of sourdough bread. Bacterial populations can be influenced by temperature, flour type, and hydration level.
There are three types of LAB found in sourdough, and they are classified by how they ferment sugars and the resulting by-products produced.
- Homofermentative LAB produce lactic acid.
- Heterofermentative LAB produce lactic acid, acetic acid or ethanol, in addition to carbon dioxide.
- Facultative Heterofermentative can switch between homofermentative and heterofermentative depending on environmental conditions (can switch between pathways depending on what sugars are available).

Different temperatures will favor different types of LAB, so you can adjust the temperature of your starter or levain to suit your tastes over time. In general, homofermentative LAB favors warmer temperatures, and heterofermentative LAB favors cooler temperatures. There are mixed thoughts on what “warmer” and “cooler” are exactly, but in general, 86-95°F (30-35°C) is on the warmer side, and 64-77°F (18-25°C) is cooler. However, both types can grow outside of their “ideal range.” At warmer temperatures, LAB will be more active overall, and acids will accumulate faster- which can result in a more sour loaf.
LAB is only one piece of the picture. Wild yeasts thrive around 77-86°F (25 - 30°C). Within this temperature range is when they will be the most active, multiplying and producing the byproducts that leaven bread. This process will still occur at lower temperatures (yeast is more tolerant of cooler temperatures than LAB), albeit slower.
With living things, much is conditional, and many variables will impact the outcome. It is not as simple as drawing a straight line from point “A” to point “B.” Experiment with your starter, and find what works for your schedule and what flavors suit your taste.

Ready When you are Sourdough Starter
Fermentation activity would be a bell curve if graphed. After feeding, the activity exponentially increases as the microorganisms feed and reproduce. Once this activity reaches a peak, there is a drop-off as the food source disappears, and the population of microorganisms begins to die off. The ideal time to feed or use a sourdough starter is when it peaks or shortly after. Doing so will ensure the yeast and bacteria populations are at their height and fermentation activity is strong. Use it too soon, and the starter will not be vigorous enough. Wait too long, the starter will become overly acidic, and the yeast population will decrease. With the Sourdough Home, you have more control over when your starter peaks, setting you up for better success when it's time to bake.

Do I need to cover the starter when placed in the Sourdough Home.
Carol – Yes, we would recommend covering your starter.
Could you explain how I leave the starter in the “Home” at what temperature when I will be gone for five days and how to feed it when I need it to bake again? Do I feed it before I put it in for the “rest”? How many days before I can use my starter?
Sharon – Based on our experiments, our sourdough starter took 5 days to ripen at 45°F (7°C). That was with a seed ratio of 1:4:4 (one part starter, four parts water, and four parts flour by weight). We put freshly fed starter into the Sourdough Home set to 45°F, and 5 days later, it was fully ripe. At that point, we removed the starter and either used it for baking or gave it a refreshment before putting it back into the Home. Some people prefer to make a levain build from their starter if it has been in the Sourdough Home for multiple days without being refreshed. From our experience, this is optional as long as your starter is ripe. (We successfully used a 5-day-old starter for sourdough bread without an additional feeding.) However, if your starter seems overripe or you prefer to do so, one single feeding should be enough to ready it for baking. It will take some experimentation to determine what works best for your starter. However, once you do, you will have a new level of control over the fermentation rate, and you can utilize that to suit your baking schedule.
I just received my Sourdough Home. Using my mature 100% hydration starter I converted over to a 1:4:4. I was hoping to bake on Saturday so put my jar in the SDH at 54 for a two day fermentation. My thoughts were that I would feed the 1:4:4 on Friday, set the temp for 77 and it would be ready for use on Saturday. In reading the comment from Carol it sounds as though the 1:4:4 ratio I made today needs 5 days to ferment before I can use it? Please confirm. Thank you!
Pam – It sounds like you have the right idea. From our experience, a starter that has just been fed a 1:4:4 ratio by weight and then put into the Sourdough Home set to 54F will take two days to ripen. So, if you put your starter in the SDH today (Wednesday), it should be ready for another feeding on Friday. If you increase the temperature at that point as you plan to do, then your starter should be ready for baking on Saturday. I am thoroughly confused. I have a starter that is 2.5 years old. I’ve always stored it in the refrigerator and took it out once a week for a refresh (occasionally longer than a week). I always let it come to room temperature prior to feeding. My feeding has been 80 grams of water , 20 grams of current starter, 100 grams of flour. How does my newly purchased sourdough home help me? What temperature do I use between feedings? Do I have to bring it to a different temperature prior to feeding? For how long? And once fed do I immediately return the starter to the home and at what temperature?
Amy – There isn’t one best way to maintain your starter using the Sourdough Home. We designed it so that bakers can have a tool that provides them greater control over the fermentation rate of their starter. The temperature used depends on how often you want to feed your starter. You can adjust the temperature to speed up or slow down fermentation. From our experience, the refrigerator is just too cold, and the starter is better held for longer periods at a slightly warmer temperature. If you wish to continue feeding your starter once a week, you can try keeping your Sourdough Home at 43F. Your starter should still be active at this temperature and will peak, but it will occur slowly over days rather than hours (if at a warmer temperature.) There is no need to let your starter come to warm up again before feeding it. You can feed it and place it back into the Sourdough Home. It will take some experimentation to figure out what works best for you and your starter, but once you do, it will open up a whole new world of possibilities and give you much greater control over your starter. Hi. I just received the sourdough home as a birthday present. I love it! My question is, I am going out of town for 11 days, how do I maintain my starter in the sourdough home for longer periods of time. Should I drop the temperature, and increase the feeding ratio? Thank you.
Patti- Yes, we’d recommend doing those two things. 1) Set the Sourdough Home temperature to its lowest setting (5°C). This will slow down the fermentation process as much as possible 2) Use a small inoculation percentage (or seed ratio) for the last feeding before storing the starter. The larger the amount of starter used when feeding (in relation to the flour and water), the faster the freshly fed starter will ferment. Using a very small percentage will extend the time you have before the microbes exhaust their food source. Try something like 1:6:6 (1 part starter: 6 parts flour: 6 parts water- all by weight) or even 1:8:8. When you return, raise the temperature of the SD Home and give the starter a couple of feedings (with your preferred feeding ratio) before using it.
