The sheeter board that comes standard with the folding sheeter is more than adequate to perform most everything you want a dough sheeter to do. The artificial marble board gives you the ability to keep your materials from excessively heating up while you are rolling them out. To this end the board is shorter than the standard one to fit easily into a freezer for chilling. As advertised, the board holds a cold temperature quite well.
Great but I wish it was longer
Not really sure why the marble board is so much shorter. Makes it inconvenient to process same dough batches at the same time.
