I purchased this specifically for proofing my (wild yeast) panettone doughs which require long 12-14 hour proofs. Being a biochemist, I put the product specs to the test with a few thermo probes in my dough and this proofer temp control is spot on perfect. I could not be happier and it has made life in our chilly kitchen so much easier now that we have consistent rise times and controlled temperatures. It's quite light and can be lifted with one hand making it easy to move around if necessary and we love the fact it folds to about the size of a briefcase for storage. How nice to find a gadget that works as promised. We make a variety of bread on a routine basis and this proofer is going to get a lot of use. If they ever do a version 2.0, would love to have a unit that can hold a standard 12" x 18" sheet pan. Thank you for making a great product.

I have had my proofer for almost a year. Within two days of receiving this appliance my slow cooker stopped working. Fortunately, I had the proofer, so I quickly set it up, put the pan in, and kept my fingers crossed that it would work. No worries; it was absolutely perfect! My husband thought it might work wonders on a cheesecake, so we tried that out within the first week of having the proofer. It took hours to set, but the smoothness was unequaled. I did another one yesterday, this time using an old familiar recipe. It took 6.5 hours to set, using the highest slow cooker setting. Today we sliced into it, and it was hands-down the best texture we have ever had in this cheesecake. I would absolutely recommend exploring this idea further. Oh, and yes, I pull it out often to proof bread; as others have stated it provides an even temperature for rising, no matter the time of year. I've done sourdough, no-knead, dinner rolls, multi-grain, and cinnamon rolls, among other types. I cannot imagine going back to my old way of doing things!
