WILLIAMSTOWN, Mass. – It’s the part of the bread recipe that reads ‘let dough rise in a warm, draft-free place’ that has vexed home bakers for generations. Professional bakers use large and expensive bread proofers to maintain ideal conditions to ferment yeast and create the perfect rise, but when baking bread in one’s own kitchen, trial and experimentation have ruled the day for centuries, and not always with good results.
Michael Taylor, an engineer and longtime bread baker, is well acquainted with the homespun solutions bakers have tried in search of a more controlled rise. When in use, the Brød & Taylor proofer can hold a large mixing bowl or several loaves of hand-shaped yeast dough. When folded for storage, however, it collapses to under three inches in height, small enough to be stowed in a drawer.
